Pour and serve. ------------------------------------------------------------------------- Tofu Lettuce Wraps 1 16oz block of tofu cut into small cubes 4-5 cloves garlic grated 1 inch ginger crated 1 carrot shredded 1-2 green onions sliced any other frozen veggies you have on hand 10 cashews (optional) 2 cups of frozen corn 1/4 cup soy sauce or Tamari 1/4 tsp chili powder 1 tsp balsamic vinegar On a non stick skillet, heat up a few tablespoons of water. once the water is hot, add garlic and ginger, stir for a minute or two add carrots, green onions and any other veggies you are using. Cook for 5 minutes until soft and add water as needed to prevent burning or sticking. After 5 minutes add tofu, stir and cook for 5 minutes until tofu is cook and it starts browning. Add the corn, cashews and stir. cook for a minute or two. Add soy sauce and chili powder. Stir again and cook for a few minutes until all the liquid is absorbed. Remove from heat. Add balsamic vinegar. Stir well and serve in large, leafy lettuce like butter lettuces or romaine. --------------------------------------------------------------------------------- Mushroom Soup 2 TBS filtered water 2 small onions, diced 3.5 oz. shitake mushrooms, de-stemmed and sliced 16 oz. baby portobella mushrooms (or regular button mushrooms), sliced 1/4 cup tamari (or soy sauce) 2 tsp dried dill 1 1/2 tsp paprika 1 tsp lemon pepper 1 tbs lemon juice 1/4 cup oat flour (or fine almond flour) 2 cups vegetable broth 3 cups unsweetened plain almond milk (or other low fat plant milk ) In a stockpot or large saucepan, heat water over medium heat and cook onions until translucent. Add mushrooms and cook them down for about 5 minutes. Add tamari, dill, paprika, pepper and lemon juice. Once the mushrooms are quite cooked down and have released a substantial amount of liquid, stir in the flour to form a chunky mushroom paste. Immediately add the first cup of broth and bring the mixture up to a simmer. Add in the second cup of broth, and bring to a simmer once more. Follow the same procedure with the almond milk, adding one cup at a time, and bringing to a simmer (not a boil) each time. Once all five cups of liquid have been added, let the pot simmer (not boil) for 10-15 minutes. Turn off heat; let sit 5-10 minutes before serving.
