28 Day Dry Aged Rib Eye Steak - Using Dry Age Bags. In this video I take a regular on the bone Rib eye steak and pop it in one of my dry ageing bags for 28 days. The difference in flavour, texture and yeild is simply amazing. This is a project anyone can embark upon without the need for an expensive drying cabinet. Simply pop the meat in the bag and draw a vacuum. Weigh it and calculate a good weight loss (typically 10% to 15%).
