Bring to a boil and cook for about 30 minutes or until completely soft. -While still hot, peel the potato and press it through a potato ricer into a bowl. -Add the water and potato flour as needed while mixing in a stand mixer or using a spoon. Incorporate until a smooth, soft dough forms. -Shape the dough into round dumplings. -Store in the fridge until ready to cook (up to 24 hours). To cook: -Bring a large pot of salted water to a boil, then reduce to a gentle simmer. -Carefully lower the dumplings into the water. Do not let it boil. -Let the little fellas steep for about 20 minutes. When they float to the surface, they are done. -Serve warm with goulash and Rotkraut. Or Sauerbraten. Or whatever you like.
