Looking for something different to stir fry for the family? How about chow fun? A simple yet absolutely delicious hardy dish with thick rice noodles and a host of nutritious ingredients in a soy based sauce. Let's get started. Shrimp Chow Fun Recipe Ingredients: 14 Jumbo shrimp (21-25 count), peeled & deveined Marinate with: ½ tablespoon (7.39ml) light soy sauce ½ tablespoon rice wine ½ tablespoon corn starch ½ tablespoon oil Marinate for 2 hours in refrigerator 16 oz. (453g) Fresh chow fun noodles (blanch for 30 seconds) or 6 oz. (170g) Dried rice noodles or pad Thai noodles (soaked in tap water for an hour) 1Cup (236ml) Fresh bean sprouts ¼ Cup (59ml) Jumbo yellow onion 4 Shiitake mushrooms (soaked for 2 hours in water) ½ Cup (118ml) Fresh mushrooms (optional) 3-4 Green onion (cut 1-1/2”) ¼ Cup (118ml) Red bell peppers, seeded and julienne (optional) ¼ Cup (118ml) Carrots, shredded For the Sauce: 1 Teaspoon (5ml) dark soy 2 Tablespoon (29ml) light soy 1 Teaspoon (5ml) chili oil (optional) ½ Teaspoon (10ml) sugar 1 Tablespoon (15ml) rice wine 2 Tablespoon (29ml) water Dash sesame oil1/8 Teaspoon (0.62ml) White pepper powder For Stir Frying: 2 Tablespoon (29ml) cooking oil, divided ½ Tablespoon (8ml) chopped ginger 1 Tablespoon (15ml) chopped garlic Instructions: 1.Combine all ingredients for sauce, whisk well until sugar has dissolved. Set aside. 2.Heat a wok over high heat; add 1 Tbs. cooking oil and add shrimp. Cook 1 to 2 minute each side or until ¾ way cooked. Remove from wok and set aside. 3.In same wok, add remaining cooking oil; add ginger, garlic and onions. Stir fry for 30 second to 1 minute or until you can smell the aroma. Add mushrooms, carrots and cook 1 minute or until soft are soften. Add more oil 1 tsp. at a time if needed. 4.Add noodles and sauce we made earlier. Stir fry for 1 to 2 minutes or until noodles absorbed sauce evenly. Now, add green onion, bean sprouts and shrimp, toss everything together and stir fry for 30 second to 1 minute. Remove from heat. Add additional soy sauce or salt to taste. 5.Serve immediately. Enjoy! Serves 2-3 Note: You can substitute shrimp to extra firm tofu or any other protein you prefer.
