Kung Pao Chicken Recipe Ingredients: 16oz (453.59ml) Chicken thigh meat (diced) Options: Chicken breast, beef, shrimp, tofu or all veggies 1/4 Cup (59.15ml) Onions (diced) 1/4 Cup (59.15ml) Sweet red peppers (diced) 1/4 Cup (59.15ml) Green peppers (diced) 1/4 Cup (59.15ml) Carrots (diced) 1/4 Cup (59.15ml) Celery (diced) 1/4 Cup (59.15ml) Button mushrooms (diced) 1/4 Cup (59.15ml) Water chestnuts (diced) 1/4 Cup (59.15ml) Roasted peanuts (diced) 2-4 Thai chili peppers ( or dried chili peppers) 1/2 Tablespoon (7.39ml) Minced ginger 1/2 Tablespoon (7.39ml) Minced garlic Ingredient for the sauce: 1/4 Cup (59.15ml) Water or chicken stock 1-1/2 Tablespoons (22.18ml) Sugar 1 Tablespoon (14.79ml) Vinegar 1 Tablespoon (14.79ml) Kikkoman soy sauce 1 Teaspoon (4.93ml) Dark soy sauce 1 Tablespoon (14.79ml) Hoisin sauce 2 Tablespoons (29.57ml) Tomato ketchup 1/8 Teaspoon (0.062ml) Garlic powder 1/8 Teaspoon (0.062ml) White pepper powder 1/8 Teaspoon (0.062ml) Ground chili pepper 1/2 Teaspoon (2.46ml) Sesame oil Pinch 5- spice powder 1/2 Tablespoon (7.39ml) Sichuan peppercorn (aka prickly ash) Chicken marinade: 1 Tablespoon (14.79ml) Light soy sauce 1 Tablespoon (14.79ml) Rice wine 1 Tablespoon (14.79ml) Sugar 1 Tablespoon (14.79ml) Corn starch 1 Tablespoon (14.79ml) Vegetable oil 1 Egg white Directions: 1. Marinate chicken and set aside for 30 minutes 2. Roast peppercorn for 1 minute over medium heat. Use mortar and pestle to ground. 3. Heat wok and add in 1 tablespoon (14.79ml) vegetable oil 4. Put in chicken and stir fry until color change to white and set aside 5. Add in vegetables. Mix in sauce and cook till vegetables are tender 6. Add in chicken and cook for another 2-3 minutes 7.
