There's nothing like a warming bowl of soup to calm things down, set things right and fill the tummy. But how often have you tried a chilled soup? National Homemade Soup Day is today and though it's February and right in the middle of winter, I thought I'd share a favorite of mine for Chilled Minted Pea Soup...you know, get you ready for Spring. Chilled Pea Soup, if kept simple and made correctly, is a delight. And believe it or not, I actually prefer frozen peas to fresh peas in this soup, but you can use fresh. The key is to barely warm the peas in the aromatic liquid...really, allow it only to come to the simmer and then remove it from heat. This will keep the sweetness of the peas and also maintain their bright color. And, to pump up that color, I add baby spinach just before pureeing. Go, chlorophyl! Lastly, fresh mint is essential.
