Ingredients: Dough: All-purpose flour Salt Water to make soft dough Yeast Filling: Finely chopped leek Optional: boiled and mashed potato Finely chopped onion Optional: green chilies Salt to taste Oil for cooking Pepper Step 1 – Prepare the dough Mix flour, a pinch of salt, water, and a little yeast . Knead it into a soft dough and let it rest for a few minutes. Step 2 – Prepare the filling Chop the leek and onion finely. If you want, add boiled mashed potato for extra softness. Add salt and optional spices like chili, black pepper, or turmeric. Mix well. Step 3 – Roll the dough Take a small piece of dough and roll it into a thin circle. Step 4 – Add the filling Spread the filling evenly on one side of the dough circle. Fold it over and press the edges gently to seal. Step 5 – Cook the Bolani Heat a little oil in a pan. Cook the Bolani on medium heat until both sides are golden brown. Serve hot and enjoy! Lamb shank: Lamb shank Oil Chopped onions Water Salt Cumin Rice (soaked for a few hours) Sugar (optional, for aroma) Barberries (optional, for color and flavor) Saffron (optional, for aroma and color) Fried onions (optional, for topping) Recipe: Step 1 – Fry the meat Fry the lamb shank with a little oil until lightly browned. Step 2 – Add onions Add chopped onions and fry until soft and fragrant. Step 3 – Cook in pressure cooker Add water and salt, then cook the lamb shank in a pressure cooker for about thirty minutes until tender. Step 4 – Prepare the rice Boil the soaked rice until it is about eighty percent done, then drain the water. Step 5 – Layer the pilaf Place the partially cooked rice over the cooked lamb shank. Add salt and cumin on top. Fry a little oil with sugar and pour it over the rice. Step 6 – Steam the rice Cover and let the palow steam for about fifteen minutes until the rice is fluffy and each grain is separate. Step 7 – Add finishing touches Add barberries, saffron, or fried onions on top for extra flavor and color.
