🍎 Apple Cinnamon Cake Recipe Dry Ingredients Maida (all-purpose flour): 150 g Milk powder: 2 tbsp Baking powder: 1 tsp Baking soda: a pinch Salt: a pinch Cinnamon powder: ½ tsp Wet Ingredients Butter: 75 g Sugar: 110 g (about ¾ cup) Eggs: 2 Vanilla essence: 1 tsp Coconut milk: ¼ cup Apple purée: 120 g (apples sautéed in butter, then blended into a purée) For the apple layer: Sautéed apple pieces (lightly cooked in butter and a little sugar, if you like) Method Preheat the oven to 160°C. Prepare the dry mix: In a bowl, combine maida, milk powder, baking powder, baking soda, salt, and cinnamon powder. Cream butter and sugar together until light and fluffy. Add eggs one at a time, beating well after each addition. Stir in vanilla essence, then add the apple purée and coconut milk. Gently fold in the dry ingredients until just combined — do not overmix. Layer the batter: Pour half the batter into a greased and lined baking tin. Add a layer of sautéed apple pieces over it. Pour in the remaining batter, then top with more apple pieces. Bake at 160°C for about 50 minutes (tested in a Morphy Richards oven; timing may vary depending on your oven). Allow to cool slightly before unmoulding. Tip: The cinnamon enhances the apple’s natural sweetness — the aroma fills your kitchen as it bakes. Best served slightly warm with tea or vanilla ice cream. 🍏✨
