Welcome back to my kitchen, today I am sharing with you some small batch preserving from our homestead kitchen. I am taking a small garden harvest and freezing and fermenting to make use of what we have coming in. This season has been busy and the garden may not be thriving, but I am putting up what I can, when I can for winter eating. Fermenting Weights: https://amzn.to/45eGGpd Pesto Recipe: 4 cups basil - mature stems removed 2/3 cup walnuts, toasted or raw 6 cloves garlic 1 tsp sea salt 1/2 tsp pepper 1 1/3 cup olive oil 1 cup grated parmesan cheese Fermenting Brine: 4 cups water 2 tbsp sea salt For dill pickles, I add a few cloves garlic and sprigs of dill to a clean quart jar. Add pickling cucumbers and top with brine. Make sure everything is fully submerged in the brine, I like to use the below fermenting weights. Cover loosely with a lid and set aside 2-5 days depending on how fermented you want your pickles and the temperature of your home.
