Hit like, subscribe, and let’s cook 👨🍳🍲 Escarole Soup with Veal Meatballs (Modified with your ingredients & method) Serves: 6–8 Total Time: ~1 hour 🥕 Soup Ingredients 1 cup carrots, chopped 1 cup celery, chopped 1 cup onion, chopped 1 large head escarole, thoroughly cleaned and chopped 8 cups low-sodium chicken broth 1–2 tbsp tomato paste (for color, not tomato flavor) Salt, black pepper, and garlic powder — to taste 🥩 Veal Meatball Ingredients 1.25 lbs good-quality ground veal 2 slices white bread ½ cup breadcrumbs Coarsely chopped parsley Salt, black pepper, and garlic powder — to taste 🍲 Instructions 1. Start the Soup (First — Always First) In a large soup pot, add the chicken broth, chopped carrots, celery, and onion. Season lightly with salt, pepper, and garlic powder. Bring to a gentle boil, then lower to a steady simmer. Let simmer about 20 minutes, until the vegetables are tender. 2. Add the Escarole Stir in the chopped escarole (it will look like a lot — trust the process). Continue simmering another 10 minutes, letting the escarole soften and flavor the broth. Bring the soup back to a gentle boil and keep it there. 3. Make the Veal Meatballs (While Soup Simmering) Soak the white bread slices in a little water, then squeeze out well. In a large bowl, gently combine: Ground veal Soaked bread Breadcrumbs Parsley Salt, pepper, and garlic powder Mix just until combined — do not overwork.
