When I found out this month's collab (check the other awesome channels below), I was excited to try Ropa Vieja. Who wouldn't love a new recipe promising meaty deliciousness? The good news? It's incredibly easy and super flavoursome. Truly delivered on taste and sauciness. The bad news? You will be asked to make it a lot. All the time. This video is for those who keep asking - now you can make it yourself! Don't forget to invite me. INGREDIENTS: 1kg Beef flank steak 3 Carrots 2 Tomatoes 2 Celery stalks 1 Tin of chopped tomatoes 1 Red pepper 1 Green pepper 1 Yellow pepper 2 Onions 2 Tsp crushed garlic 2 Chicken stock cubes (500 ml stock) 3 Bay leaves 3 Cloves 3 Tsp oregano 3 Tsp ground cumin 2 Tsp smoked paprika 1 Cup of dry white wine 1 Tsp allspice 100G Tomato paste 200G Pitted olives Salt and pepper to taste METHOD: 1. Chop all the veg into equal sized cubes. 2. Season the meat with salt. Pro tip - smoked salt adds extra flavour and depth. 3. Heat the oil and brown the meat on all sides. Remove the meat and keep aside. 4. Add the chopped onions, tomatoes, celery, peppers, onions, and sliced carrots and cook for 5 minutes. 5. Add the garlic, oregano, cumin, allspice, paprika, and cloves, and stir through for 2 minutes. 6. Stir in the tin of tomatoes, tomato paste and white wine. Mix thoroughly and cook for 5 minutes. 7. If using stock cubes, mix with 500ml hot water, and add your stock to the pot and stir. 8. Return the meat to the pot and ensure its covered with sauce. 9. Pop the bay leaves in. 10. Close the lid, and set to high pressure for 1 hour. Release the pressure valve when safe. 11. Carefully remove the meat. 12. Set the pot to saute for 20 minutes. Add the olives and let your sauce reduce to thick deliciousness. 13. Shred the meat with 2 forks, and add it back to the sauce. Cook for 5 minutes. 14. Serve on a bed of rice with a side salad and ENJOY!
