Hello and Happy Halloween my Friends, welcome to the twelfth episode of my Fall Baking Series and to my Southern Kitchen! It is Halloween Season my Friends, time to dress up, go Trick or Treating, and enjoy the Parties! Are you looking for some yummy Halloween Treats to serve for the parties? Well today’s recipe I am sharing with all of y’all some Festive Chocolate Orange Cupcakes! Moist, decedent, chocolaty and full of orange flavor and frost with a rich and creamy Orange Buttercream Frosting; these cupcakes will definitely capture the Halloween spirit and everyone will love and enjoy these and also fun to make with kids!!! Taste like you made them from scratch!! Ellen’s Halloween Treats recipes playlist: • Halloween Treats 🎃 1 (15.25 oz) box chocolate cake mix (any flavor chocolate) Orange juice (freshly squeezed or store bought) 1/2 cup real mayonnaise or applesauce 3 extra large or jumbo eggs, room temperature 1 teaspoon pure vanilla extract 1 teaspoon pure orange extract 1 cup semi sweet (milk or dark) chocolate chips, plus 1 to 2 teaspoons all purpose flour Chocolate chips and orange zest, for garnish Orange Buttercream Frosting 1 cup (2 sticks) unsalted butter, softened 4 ounces (half 8 ounce block) cream cheese, room temperature Zest of 1 orange 1 1/2 tablespoons freshly squeezed or store bought orange juice 1 teaspoon pure vanilla extract 1 teaspoon pure orange extract 5 cups powdered sugar, sifted or whisked Ellen’s Magic: Depends on what brand of cake mix you use, follow the exact directions on the box, substitute the water for orange juice, and butter or oil for real mayonnaise or applesauce. Keep the 3 eggs. To bake the cupcakes: Follow the directions on the back of the box along with the baking time of the cupcakes (just add in the vanilla extract and orange extract to the batter). In a small bowl, add in the chocolate chips and flour and mix together until well blended then add and fold it into the cake batter. Fill about 12 to 24 cupcake liners 3/4 way up. Remove from the oven and cool in the cupcake pan for 10 minutes then remove the cupcakes from the pan and let them cool completely on a wire rack. Place the cupcakes onto a platter then pipe them with the frosting using a 1M star piping tip and decorate with the chocolate chips and orange zest, serve and enjoy! For the Orange Buttercream Frosting: In a large bowl with hand mixer, add the butter and cream cheese; cream on medium speed until fluffy (scrape the bowl occasionally). Next add and mix in the orange zest, orange juice, vanilla extract and orange extract until well combined. Reduce the speed to low and then slowly add and mix in the powdered sugar until well incorporated.
