Ingredients: 1C smartbalance softened ¾ C of organic cane sugar ¾ C packed brown sugar ½ C silken tofu packed ( replacement for 2 eggs) 1t vanilla extract 1 ¼ C of all purpose flour ½ t baking soda ¾ t ground cinnamon ½ t salt 2 ¾ C rolled oats 1C raisins heaping Directions: Preheat the oven to 375 degrees F (190 degrees C). In a large bowl, cream together butter, cane sugar, brown sugar until smooth. Beat in the silken tofu and vanilla until fluffy. Stir flour, baking soda, salt and cinnamon together. Gradually beat into butter mixture. Stir in oats and raisins. Use a cookie scooper to place dough on parchment paper on cookie sheets. Bake 8 -10 minutes in the preheated oven, or until golden brown. Cool slightly before removing to a wire rack.
