Set out a big mixing bowl and measure out 1350 g of whole wheat flour. Pour 710 mL of water into the flour, which will help you form a nice, firm dough. Knead the dough Submerge the dough in cold water for 8 hours. Set your dough in the same mixing bowl, covering it all the way with cold water. Then wrap the bowl with a clean cling wrap. Wash dough with clean water until only the gluten is left You may need to make this in batches and freeze what you won't use. Lamb Broth 4 teaspoons Vegan olive oil 3 small carrots (sliced) 1 medium onion (sliced) 3-4 garlic cloves (chopped) 30g vegan non-lamb stock 1 teaspoon thyme dry 3 fresh rosemary sticks 1 teaspoon sage dry 500ml water 3 teaspoons Wostershire sauce 45ml low sodium soy sauce Salt for seasoning (Himalayan) Method Braise garlic 1min, add onion and carrot. Braise till golden brown Add all the remaining ingredients simmer for 5min. Steam the red dough for an hour. (Use preferred amount) Add the white dough (fat) put in the microwave for 2min so it becomes lastic and slightly cooked. Drop in the broth and simmer for 30min. add water along the way if necessary. Cover with hot dog mustard (vegan) and sprinkle with thyme (30g) Roast in the oven at 230 degrees for 30min Thrust the bones (racks) then put back in the oven for 15min. Take it out.
