GARLIC RICE =========== Ingredients: 2 cups of cooked day old white rice 4-6 garlic cloves finely minced 1/4 teaspoon salt 1-2 tablespoons vegetable oil (canola, safflower, sunflower, avocado, or any other high temperature oil) Directions: Make sure you have all these ingredients ready and on hand. Since we’ll be cooking at a high temperature, cooking this will be really fast. 1. In a smoking hot wok, on high heat, throw in the your oil, garlic, and salt. (If you don’t have a wok, use a normal pan, but keep the temperature at medium). 2. Keep all those ingredients moving. 3. Once some of the garlic starts to turn golden brown, throw in your white rice. 4. Keep sautéing all of that for a few minutes and you’re done. TOFU SCRAMBLE ============== Ingredients: 1 block of extra firm tofu 1/4 teaspoon salt 1/4 teaspoon black pepper 1 teaspoon garlic powder 1 teaspoon onion powder 1 teaspoon paprika 1/4 teaspoon turmeric 2 tablespoons nutritional yeast Directions: 1. Make sure to drain and crumble up your tofu before you start. 2. On medium heat, throw in your crumbled tofu with some olive oil. 3. Season it with your salt, pepper, onion powder, garlic powder, and paprika. 4. Saute all that for a couple minutes then add in your turmeric and nutritional yeast. 5. Make sure all the seasonings have been distributed evenly then you’re done. JACKFRUIT ADOBO ================ Ingredients: 2 minced garlic cloves 1/2 chopped onion 1 bay leaf 1 20oz can of jackfruit in brine or water 1/4 teaspoon salt 1 teaspoon roughly cracked black pepper 1 teaspoon garlic powder 4 tablespoons soy sauce or Tamara 2 tablespoons white vinegar Directions: 1. Drain and rinse the canned jackfruit. 2. Boil the strained jackfruit for 10 minutes. This will get rid of that briney aftertaste from the canned jackfruit. 3. Rinse the boiled jackfruit in cold water 4. Once the jackfruit is cool enough to handle, cut the jackfruit pieces so they start looking like pulled pork or shredded chicken. 5. Now let’s start cooking 6. On medium heat in a pan, throw in some olive oil with the garlic and onions. 7. Sauce that until the veggies start to sweat and season it with your salt and garlic powder. 8. Next, throw in your bay leaf and your boiled jackfruit. I like to let all that stuff sit in the pan for a little bit so that some pieces get a little toasty. 9. Now throw in your soy sauce and white vinegar and saute that until most of the liquid has evaporated. 10. Now all you gotta do is throw that stuff into a tortilla and you’re done!! Adding the tomatoes and green onions was a definite plus. I highly suggest you add those. 11. Enjoy!!!
