For Scrambled Protein: 1 block tofu or pumfu 1 tbsp oil (avocado or other allergy-safe oil) ¼ tsp salt ¼ tsp cumin 1 tbsp nutritional yeast Heat oil. Mash tofu into small pieces. Stir frequently while cooking. Lower heat when tofu begins to dry. Stir in seasonings. Set aside. Vegetables (choose your own - carrots, mushrooms, onions, garlic, etc.): 1/2 - 1 cup Veggies (chopped bell peppers) 1 small bunch greens (kale, de-stemmed & chopped) ¼ cup chopped fresh herb (cilantro, for topping) Rice & Seasoning: 3 cups cooked rice (fluffed) 2 tbsp Bragg’s liquid aminos (or Coconut Aminos plus 1/4 t Salt, for soy free version) 1 tbsp maple syrup (or honey/agave/sugar, etc.) 1 tbsp lemon juice (or juice of ½ lemon, or vinegar, lime juice, tiny bit of citric acid, or other sour seasoning) Extra oil for frying rice (optional) Process Summary: Prepare protein (bake or scramble). Sauté chopped veggies until tender. Add rice, protein, Bragg’s, sweetener, and oil (if using). Stir-fry briefly, then add greens and cook until wilted. Turn off heat, stir in lemon juice.
