Line a baking tray with parchment paper. Or use an air fryer Place the potatoes into a mixing bowl and add the olive oil and all the seasonings. Mix to combine. Place the seasoned potatoes onto the line baking tray and bake for 25 minutes or until soft and golden, mixing halfway through. Remove and let cool. Place a large high-rimmed pan over high heat, and add in olive oil and the beef mince. Sear for 6 minutes. Add in the garlic, spring onions (scallion), ground cumin, Italian herbs, and seasoning to taste. Mix to combine and cook for 3 minutes. Add in the tomatoes, mix well, reduce heat to medium and simmer for 8-12 minutes, stirring occasionally. Add over the grated mozzarella cheese, allow it to melt, and remove from the stovetop. Or, you can add it on at the end. Evenly divide and lay the potatoes into 5 meal prep containers. Place the beef mince over the top and garnish with sour cream, spring onion (scallion), and sriracha mayonnaise. Dig in. Video Uploaded By Jack Ovens
