Hey there, get ready for something different! We're cooking up Philly Cheesesteak Sandwiches with a homemade cheese sauce and man, is it delicious! Enjoy! ~TWL Philly Cheese Steak Ingredients: (This amount of meat can make 2-4 ten-inch-long sandwiches depending on the amount of meat in each sandwich. Also, in regard to the cheese sauce, you can use Fontina or more cheddar in place of the Gruyere and Swiss if you prefer. · 16 oz. of Ribeye steak (or as much or little as you like) sliced thin · 2 oz. Gruyere cheese (shredded) · 2 oz. Swiss cheese (shredded) · 4 oz. Cheddar cheese (white or yellow shredded) · 4 oz. Swiss cheese (shredded) · 4 oz. Provolone (sliced) · 1 green bell pepper (julienned) · 1 onion (julienned or diced. Whatever you prefer.) · 2-4 sweet peppers (julienned) or red bell pepper · 2 cups of heavy cream · ¼ tsp paprika · ¼ tsp thyme · 6-8 cloves garlic (minced) · 3-4 tbsp of butter · Salt and pepper to taste · 1 tbsp of Dijon mustard · 2-4 ten-inch-long sandwich rolls (Shorter rolls are fine too. However, bread should be soft and not thick and heavy) · 1 tbsp Lawry’s seasoning (Optional. Salt and Pepper is fine if you prefer) Cheese Sauce: This adds to the sandwich but is optional. Using only sliced provolone is fine. However, to make the cheese sauce: Add 1-2 tbsp of butter in a sauce pan. After it has melted, add garlic and saute for about 30 seconds then add heavy cream. Add paprika and thyme while whisking. Bring cream to a simmer and then gradually add shredded cheese into the cream while whisking. Start with a small handful first and as it melts, continue adding the rest of the cheese in the same amount until all the cheese has been added and mixed/melted into heavy cream. In the end, you should have a thick cheese sauce, similar to what you would pour on nachos. Once done, set aside Peppers and Onions: Take 1 tbsp of butter melt in a pan and add 1 tbsp of garlic and saute for 30 seconds on medium heat. In the video I am using an electric griddle. However, you can do this over the stove in a large pan. Take julienned peppers and onions and add them to butter and garlic. You can do them separately or together. Make sure to salt and pepper to taste. Set them aside. Ribeye: If you have a deli slicer, slice ribeye thinly about 2 millimeters thick. You can also have the butcher slice it for you as well. If you are doing it at home, place the meat in the freeze for about an hour prior to slice so it will be easier to handle. Cooking and assembling the sandwich: Place 1 tbsp of butter on griddle or in pan. Once it’s melted add garlic and saute for 30 seconds. Add meat on top of butter and garlic. Let the meat cook for about 2 mins then flip. Once the meat has cooked for anther two minutes, use two spatulas or a set of tongs and a spatula and start pulling the meat apart. Since the meat is sliced thinly, it should pull apart easily. Season with salt and pepper to taste or a seasoning of your choice. Lawry’s or a Montreal steak seasoning go well. Add your peppers and onions to the meat and mix together. At this point you can slice your roll in half. Make sure to leave a hinge at the back. Feel free to toast the bread if you want. Add mustard if you like. Now with the meat, peppers, and onions piled on the pan or griddle, place the slices of provolone cheese over the meat. Holding the roll with the open side at an angle downward, scoop the meat, peppers, and cheese and place them in the roll with the cheese on the inside. If you have a long spatula that is 3-4 inches wide, this will help. Once all the goods are in the bread, take some of the cheese sauce and ladle it in the sandwich over the meat. Now enjoy! Welcome!
