Salmon is baked and served over a bed of lemony orzo pasta with tomatoes and spinach! *EASIER UPDATED VERSION* (Different from video) Salmon with Orzo Pasta Ingredients For the salmon 1 1/2 lbs salmon fillet, divided into 4 portions Salt and pepper Olive oil Lemon juice For the orzo 5 garlic cloves, minced 10 oz grape or cherry tomatoes, halved or 2 Roma tomatoes, diced 2 cups orzo pasta 4 cups chicken broth 4 cups spinach 3-4 tablespoons lemon juice, or to taste Zest of 1 lemon 3 tablespoons olive oil Directions Preheat oven to 400 degrees. Place salmon onto a baking sheet. Season both sides with salt and pepper and drizzle over olive oil. Bake for 12-15 minutes, or until the salmon is cooked through. While the salmon is baking make the orzo. Combine lemon juice, lemon zest and olive oil in a small bowl. Heat oil in a pan over medium heat and sauté garlic for 30 seconds. Add tomatoes and cook for 1 minute. Stir in orzo along with more oil and cook for 1 minute. Add chicken broth and season well with salt and pepper. Bring to a boil then lower heat to medium low, cover and cook for 12 minutes. Stir in olive oil/lemon mixture. Stir in spinach and cook until just wilted then remove from heat. Top with cooked salmon fillets. Season salmon with more salt, pepper and lemon juice if desired. Instagram / joannegpimentel
