My husband is from Amritsar… and I absolutely love chole kulche! ❤️ If you’ve ever been to Amritsar, you know you can never truly match the vibe of those bustling dhabas — the sound of butter sizzling on the tawa, the smoky aroma, and that tangy chole masala simmering in huge pots. But at home, we’re recreating that same magic, one buttery kulcha at a time! In this video, I’m making authentic Amritsari Chole Kulche — the way my husband remembers it from his hometown. Soft, flaky kulchas stuffed with spiced mashed potatoes and served with rich, dhaba-style chole and tangy imli-pyaz chutney. Recipe - Ingredients: • 1 cup kabuli chana (soaked overnight) • 1 black tea bag (for color, optional) • 2 tbsp ghee • 1 tsp cumin seeds • 1 onion, finely chopped • 1 tbsp ginger-garlic paste • 2 tomatoes, pureed • 1 tbsp chole masala • ½ tsp amchur powder • ½ tsp red chili powder • Salt to taste • 1 tsp black salt • 1 tbsp kasuri methi • 1 tbsp ghee (for tadka) • Fresh coriander to garnish Steps: 1. Pressure cook chole with tea bag & salt till soft. 2. In a pan, heat ghee, add jeera, onions, and sauté. 3. Add ginger-garlic paste → cook till golden. 4. Add tomato puree, chole masala, amchur, chili powder → cook till oil separates. 5. Mix in boiled chole → mash slightly, simmer till thick. 6. Add a final tadka of ghee + hing + kasuri methi. Garnish with coriander. Kulcha Recipe Ingredients: • 1½ cups maida • ¼ cup curd • ½ tsp baking powder • ¼ tsp baking soda • 1 tsp sugar • 1 tbsp oil • Water as needed • Stuffing: boiled potatoes, chopped coriander, green chili, salt, ajwain • Butter or ghee for cooking Steps: 1. Knead soft dough using all ingredients. Rest 1 hour. 2. Stuff with potato mix, roll thick. 3. Cook on tawa till golden on both sides with ghee.
