St. Patrick's Day-Pistachio Bread Ingredients: 1/2 cup Unsalted Butter, softened 2 Large Eggs 2/3 cup 2% Milk 1 1/2 cups All Purpose Flour 3/4 cup White Sugar 1/4 teaspoon Salt 1 teaspoon Baking Powder 1 pack Pistachio Pudding Mix (ICING OPTIONAL) 1/4 cup chopped Pistachios 1 cup Powdered Sugar 2 Tablespoons 2% Milk Preheat oven to 350 degrees F and spray or oil a 9x5 loaf pan. In stand mixer bowl add butter, sugar and eggs and beat until light and fluffy about 3 minutes. Next, add your milk, pistachio pudding, baking powder and salt and mix again until just mixed. Lastly, slowly add flour and mix only until everything is incorporated. Pour batter into loaf pan and bake in oven for 40-50 minutes until a toothpick or knife comes out clean. If using icing now is the time to chop pistachios and make icing and set aside until bread is done. Let rest for about 15 minutes before moving from loaf pan and let cool completely if not making icing before slicing. If using icing once loaf has been removed to finish cooling now is the time to pour icing over top while loaf is warn and let drizzle down sides and quickly add pistachios so they will set in icing then continue to let loaf cool before slicing.
