Grind all whole spices (mace, cardamoms, peppercorns, cloves, cumin seeds) into a fine powder. 2. Heat oil, fry bay leaves and star anise until fragrant. Add ginger garlic paste, then the chicken; sauté for 5-8 minutes. 3. Mix in turmeric, chili powder, paprika, and coriander powder. Add yogurt and combine well. 4. Add salt, 1 cup of water, and cook until chicken is tender and oil separates. 5. Stir in the fried onions and the freshly ground spice mix. 6. Add another 1 cup of water, cover, and simmer for 10 minutes. 7. Finish with crushed dried mint and whole green chilies.
