These baked savoury oatmeal muffins are packed with vegetables and nutrition and can serve as a great afternoon snack as well. Ingredients: 150g (1.5 cups) oats 100g butter 1 medium onion chopped Cut spinach 100g Cut carrots 100g Almond meal Half cup 1/2 tsp baking soda Grated cheese 100g Salt and Sugar to taste Steps: Fry the onions and keep aside Dry roast the oats on a wok until lightly browned Whisk 3 eggs and add butter (melted) Whisk again and add the roasted oats Add the almond meal and mix thoroughly Add salt and sugar to taste Add the spinach leaves, carrots, fried onions, baking powder and grated cheese into the mixture Mix thoroughly and add some pepper to add flavour Take a baking tray and line each slot with some butter Add the mixture into each slot and ensure its packed in tightly Bake in a preheated oven for 20-25 mins (depends on the make of the oven and available settings) at 180 degrees Centigrade Once done, serve on its own or with some garlic dip or sauce/mayonaise.
