Remove strings from the celery and roughly chop. Peel the carrot and roughly chop. 2.Chop finely the garlic. 3.Heat the heavy based pan over medium heat. Add the olive oil and fry the garlic. Stir fry the minced beef for about 3 minutes. 4.Add the chopped onion, celery and carrot and stir fry for another 3 minutes. 5.Pour the Guinness, tomato passata, bay leaves, thyme, soup stock cube, Worcester sauce, soy sauce, oyster sauce, salt and pepper. Bring to a boil and simmer for about 30 minutes with the lid on. 6.Remove the bay leaves and thyme. Boil for about 10 minutes without the lid until the juice is almost gone. Turn off from the heat. ーMushed potato 7.Peel the potato and cut into chunk size. Soak in cold water for about 5 minutes and drain them. 8.Steam the potatoes about 20 minutes or until they are softened. Alternatively you can boil them and remove any extra moisture. 9.Add the butter, salt, milk nutmeg and ground pepper corn in the potato. Blend them together until they are smooth. 10.Place the 6. minced beef in the serving oven proof plates and make the surface evenly.Put the mushed potato in a piping bag and squeeze on the minced meat. 11.Bake in the preheated oven for about 30 minutes or until they are golden brown.
