Welcome to Bonita's Kitchen! Today we will be making Cod Casserole, made with fresh codfish fillets, dressing and so much more. See recipe below! This is a family recipe from Aunt Clara and it is so tasty!! Ingredients: Serving for 6 people/ prep time 10 minutes/ bake time 45 minutes 6 large pieces cod fillets ( boneless and skinless ) 1 medium chopped onion 2½ cups grated stale bread crumbs 2 tsp savoury 1 tbsp butter ½ tsp sea salt, more if needed ½ tsp freshly grated black pepper, more if needed Olive oil 1 tsp onion seasoning Method: Clean and dry your cod fillets, only use deboned cod. In a medium bowl add your stale bread crumbs, butter, savoury, chopped medium onion and salt, pepper. Mix all together with your hands until everything is blended together. Get a casserole dish or small roaster with cover, start adding your cod to the bottom, drizzle with olive oil, salt and pepper, then a layer of dressing ( stuffing). Continue doing this layering your, cod and dressing ( stuffing ) until all used. Then bake for 30 minutes covered in a 350°F oven, then 15 minutes uncovered in a 350°F oven. When baked remove from oven serve with fresh veggies and potatoes, or a side of toss salad. Thank you to my aunt Clara for sharing her recipe with me and making it possible to bring it to you.
