Try making this delicious and easy Veg Idli Upma the next time you have some leftover idlis and enjoy it for breakfast or as a light snack.It makes an excellent kid's tiffin box recipe too! Ingredients Leftover idlis-4 Oil-1 tbsp Mustard seeds-1 tsp Urad dal-1 tsp Chana dal-1 tsp Green chilli-1 tsp Roasted peanuts-1 tbsp Dry red chilli-2 Curry leaves-few Chopped onion-2 tbsp Chopped tomato-2 tbsp Red/green/yellow capsicum-2 tbsp Green peas-2 tbsp Salt to taste Turmeric powder-1/4 tsp Idli podi(lentil powder)-1 tbsp Coriander leaves-a handful For garnishing Coriander leaves Method Crumble left over idlis roughly. Heat oil,add mustard seeds,urad dal,chana dal, green chillies and saute for few seconds.Add chopped onion, tomato, capsicum,green peas,salt and mix.Cover and cook for 2 min till soft.Add crumbled idlis, turmeric powder,idli podi, coriander leaves and mix well.Sprinkle some water,cover and cook for 2 min. Transfer tasty Veg Idli Upma to a serving platter, garnish with coriander leaves and enjoy!
