Tiyula itum (Tausug: "black soup") is a Filipino braised beef or goat soup or stew dish originating from the Tausug people. The dish is characteristically black due to the unique use of charred coconut meat. Tiyula itum is prepared by rubbing and marinating chunks of beef in a pounded mixture of spices (pamapa) and powdered burnt coconut meat. It is then fried with garlic, onions, turmeric, ginger, and lengkuas. Once the meat is lightly browned, water is added along with additional ingredients like black pepper, lemongrass, and shallots and allowed to simmer until cooked. Coconut milk is sometimes added to thicken the broth. Other ingredients like tomatoes and siling haba chilis are also sometimes added, but they are not traditional. Tiyula itum is culturally important among the Tausug people and is sometimes characterized as "Food for the Royalty". It is commonly prepared in special occasions like weddings and during Hari Raya festivities. Ingredients & how to cook; Marinade beef 1 to 3 hours preferably overnight in a fridge In a bowl mix ½ kilo of beef cut into small cubes, most preferably if with bones as bones can give more flavor to the soup. 3 inches of minced ginger. 6 to 8 gloves of minced garlic, just add half of it to the bowl and remain the other half to be used for saute. 1 tsp. of turmeric powder or 3 thumbs sized if using fresh turmeric. 2 Tbsp. of Siyunung lahing (Burnt coconut) or Pamapa itum. In my case I, included it with the marinade to boost the flavor during the marinade. ½ Tsp. of salt, careful with the salt as the Pamapa itum sometimes are with salt already. 1 Tsp. of ground black pepper. Mix all the ingredients thoroughly and cover and refrigerate. After marinating. Heat oil on a sauce pan. Sauté the remaining garlic until brown. Sauté 1 Medium sized Onions until translucent. Add marinated beef and Sauté until the juices of the beef comes out. Cover and let it simmer for 5 to 7 minutes. After simmering add 1 to 2 pieces of beef cubes, stir until dissolved. Cover again for 3 to 5 minutes. Add 3 to 5 pieces of chopped chilies and stir well. Cover again for 3 minutes. Add 3 cups of water. Wait until it boils, cover and lower the fire, cooked until the beef is tender. Add more water gradually if the water dries up or the beef is not yet fully cooked. Check the beef is cooked by fork test, try inserting the fork into the meat if it penetrates easily it is done. Serve with rice and enjoy!
