The cake is very soft and moist plus that glossy chocolate icing is to die for! #moistchocolatecake #moistchocolatecakerecipe #glossychocolateicing #glossychocolateicingrecipe MOIST CHOCOLATE CAKE WITH GLOSSY ICING RECIPE Ingredients: Chocolate Cake: 2 cups cake flour 1 2/3 cups sugar 2/3 cup cocoa powder (70g) 2 tsp baking soda 1/2 tsp salt 2 eggs 1 cup vegetable oil 1 cup buttermilk 1 cup boiling water 1 tsp instant coffee 1 1/2 vanilla extract Glossy Icing: 1/4 cup unsalted butter (63g) 3/4 cup sugar 2/3 cup cocoa powder 1/8 tsp salt 1 tsp vanilla extract 3/4 cup milk 1/4 sour cream Method: 1. Pre-heat oven to 140 degrees Celsius or 160 degrees Celsius conventional setting. 2. In a bowl, whisk together cake flour, sugar, cocoa powder, baking soda and salt. 3. Add in eggs, vegetable oil and buttermilk, and with an electric mixer, mix thoroughly. Set aside. 4. In a smaller bowl, pour a cup of boiling water, then mix it with vanilla extract. Add to the batter. Mix well. 5. Pour into a lined 22cm x 32cm rectangular pan. 6. Bake for 50 minutes at 140 degrees Celsius convection or 160 degrees Celsius conventional oven. 7. Let cake cool down. 8. In a saucepan, under low heat, melt butter slowly. When butter is melted add sugar, mix. Add cocoa powder, mix. Add salt and vanilla, mix. Add milk and sour cream. Stir constantly under low heat until all lumps are gone, and when icing is sticky enough to hold its form on top of cake, remove from heat, then slowly pour on to the cake while still warm. Cover cake with icing, then let it set before slicing and serving. Enjoy!
