Louise’s Applesauce Cookies 🍎 Ingredients 1 cup sugar 1 egg ½ teaspoon salt ½ cup shortening* 1 cup chunky applesauce 1 teaspoon baking soda ¼ teaspoon each: ground cloves, nutmeg, and cinnamon 1 teaspoon vanilla extract 2 cups flour 1 cup raisins Directions Cream together: sugar, egg, salt, and shortening until smooth. Add the applesauce and beat until the chunks are smaller. Stir in: baking soda, cloves, nutmeg, cinnamon, and vanilla. Mix in the flour until combined. Fold in the raisins. Bake at 350°F (175°C) for 16-17 minutes, until lightly golden and you can tell the middle is cooked. Cool on a wire rack—and enjoy that cozy, old-fashioned aroma! Variation If you’d rather use chocolate chips instead of raisins, skip the nutmeg and cloves for a milder flavor. (In my video, I made half with raisins and half with chocolate chips!) 🧈 Shortening Substitutes If you don’t have shortening on hand, these swaps work well: Butter – Use 1:1, but the cookies will spread a bit more and have a softer texture. Coconut Oil – Use 1:1 Ghee – Use 1:1 Margarine – Use 1 cup plus 1 tablespoon for each cup of shortening. Lard – Use 1:1; gives a crisp edge and classic old-fashioned texture. Vegan Butter – Use 1 cup plus 2 tablespoons for each cup of shortening.
