Today’s Recipe : Niramish Mochar Ghanto Daler Chapti Diye /Banana Flower Curry/নিরামিষ মোচার ঘন্ট ডালের চাপটি দিয়ে Master Chef : Smt Rubi Ghosh #mocharghonto #bananaflowercurry #niramishrecipe ABOUT MOCHAR GHANTO: Mochar Ghanto is one of the famous Bengali traditional recipe. It is one of the bengalies own authentic cuisines. Generally, Niramish Ghanto is prepared with coconut(narkel) and chola(Chickpeas). Non-Veg Mochar Ghanto is prepared with small Chingri/Shrimp. Both are equally samptuous. (In my recipe here, Niramish Mocha Ghanto has been prepared with Motor Daler Bora or Chapti (Peas dumpling ). This video also includes a very easy, step-by-step guide as to cleaning, preparing and cutting mocha. Total COOKING TIME (70-80 minutes): (prep time: 40 Mins) TOOLS AND APPLIANCES (used here): A. Prestige Induction Cooker (purchased from Amazon) (https://www.amazon.in/dp/B00YMJ0OI8?r...) B. Hawkins 5 Litre Cook n Serve Handi. (from Amazon) (https://www.amazon.in/dp/B0986S4H6V?r...) C. YFL Home Ceramic 3 Litre12” Black Serving Bowl (from Amazon) (https://amzn.in/d/9GMQKQm) D. Agaro Chef's knife (all-purpose use for kitchen(from Amazon) E. Hawkins 4 Litre Deep Kadhai (from Amazon) F. All other kitchen tools (mostly from Amazon) INGREDIENTS & PREPARATION: A) PREPPING OF MOCHA/BANANA FLOWER: (Step by Step) (with Ingredients & its quantity) 1. Take1 big sized Mocha. Firstly, grease both palms with Salt and Lemon Juice to avoid sticking of sticky sap to hands. 2. Remove outer bracts and collect the flower clusters. Repeat the process for each layer. The inner layers are packed tight and more difficult to peel, but keep going. Stop when the bracts are really difficult to peel, and flowers are tiny. Discard the outer bracts but keep the flower clusters. Save the inner core to work with it later. 3. Pluck a single floret. Each floret has a scaly translucent covering called calyx and a thick stalk with a sticky bulbous head called pistil. Discard these two parts from all the florets. Both Calyx and pistil are uneatable. 4. Chop all the florets evenly. 5. Discard the extended stem of the inner core. Slice horizontally and then, chop evenly. (see video for how to cut Mocha) 7. In a Pan, boil chopped Mocha with water, (water should be taken upto the level of chopped Mocha) 1 tsp Salt, 1 tsp Turmeric Powder & a few drops of Lemon Juice. Stop boiling while it comes to boiling point. 8. Make water-free. Cool it. Set aside B) MAKING OF PEA PODS (Motor Daler Bora) (with Ingredients & its quantity) 1. Take 1/2 cup Peas Pulses. Soak in water for 1 hour. 2. Strain water. Make a paste of pulses with : (use mixer grinder) SALT to taste, 1/4th tsp Turmeric Powder, 1/4th tsp Nigella Seeds (kalo jeera), 2 Green Chillies, 1/4th tsp Hing (asafoetida) & little Water. 3. Knead the passte well. Make beaten Pulses Dumplings as many as possible (daler chapti). 5. Fry both sides of all Dumplings in a heated 2 tbsp Mustard Oil till it turns to brown. Shift to a plate. C) PREPARAION OF MOCHAR GHANTO :(with Ingredients & its quantity) 1. Make a masala paste with 1 tbsp Ginger Paste, 1 tsp each Cumin, Coriander, Kashmiri Red Mirch, Red Chili Powder & little Water. 2 . 2 Potatoes (Medium): peel and cut to cube shaped pieces. Wash Well. Fry in heated 3 tbsp Mustard Oil with Salt to taste, 1 pinch Turmaric Powder till all turn to golden colour. Shift and keepd aside. 3. In the same oil, add 1 Dry Red Chilli, 3 crushed Green Cardamom, 2 little pieces Cinnamon sticks, 4 Cloves, 1/2 tsp Cumin Seeds, 2 Bay Leaves. Add 4 tbsp Chopped Coconut. Stir till it turns to little Golden Colour. 4. Add Masala Paste (sl.no.1). 5. Add 1/2 cup Boiled Chickpeas (Chola). Cook for 3-4 minutes. 6. When inside oil is releasing, add boiled Mocha. Mix well. 7. Cook for 3 Mins in medium to high Flame. 8. Add Salt to taste, 1/2 tsp Turmeric Powder, 1 tbsp Sugar. Mix well. 9. Add little Water. Wait till the masala is well fried. 10. Add 1 cup water & Fried Potatoes. Cover in Medium Flame till water is almost dried up and potatoes are well boiled. Paste some boiled potatoes and mix with ghanto. 11. Add 4 slitted Green Chillies & Daler Chapti. Mix well. 12. Finishall with 1/2 tsp Garam Masala Powder & 1 tbsp Ghee, Mix well. 13. Cooking is complete. Shift to a serving bowl. D) SERVING: 1. Garnish with some chopped Coconut. 2. Serve with Steamed Rice. NUTRITIONAL HIGHLIGHTS: Banana flower is brimming with nutritional & packed with essential minerals e.g. Phosphorus, iron, copper, potassium, magnesium, vitamin C, protein and carbohydrate.
