Fruitcake cookies Fruitcake Cookies Ingredients 2 ½ cups all purpose flour 1/3 cup light brown sugar ½ cup caster sugar 225 gms. Dried figs 225 gms.raisins 115 gms. Candied cherries, chopped 120 gms. Walnuts, chopped 1 tbsp. honey 2 tbsp. wine or sherry 1 tbsp. lemon juice ¼ tsp. salt 225 gms (2 sticks) butter, ½ tsp. vanilla essence 1 egg Bring the butter to room temperature. Chop the figs. In a medium bowl add the chopped dried fruits and nuts with the lemon juice, salt, wine and honey. Mix well and leave, covered, to marinate overnight on the kitchen counter. I have used an electric stand mixer. Cream the butter, brown and caster sugar and vanilla essence on speed 1, until pale yellow. Then add egg and mix on low till well incorporated. Then add the flour and continue mixing on low until just combined. Then add the marinated fruit and nuts with the residue, if any. Mix to incorporate. Avoid overmixing. Divide the dough into 2 parts and using a baking parchment, roll each into a long log about 1.5 to 2 inches in thickness. Refrigerate until firm, or until you are ready to bake. Heat oven to 160 deg C. Remove the cookie dough from the refrigerator and cut the log into ½” thick slices and placing on a baking tray (ungreased) ¼ “ apart. Bake for 15 to 20 minutes until lightly brown on the underside. Makes 55 to 60 cookies.
