Hey, y'all. I'm Jan. Today, we're making a frittata. You can make a frittata for any meal.. breakfast, brunch, lunch, or supper. I love eating breakfast food for supper. This is easy to make. You can add whatever ingredients to it that you prefer. But here is what I used: About 10 baby(ish) potatoes cut into 1 inch chunks 1/2 of an onion, diced 1lb (16 ounces) Hot breakfast sausage, cooked through 2 cups Shredded Sharp cheddar cheese 9 eggs, whisked Seasonings: Smoked paprika, pepper, salt, onion and garlic powders, and a pinch of cayenne. (I used these on the potatoes along with about a tablespoon of EV olive oil. Preheat your oven to 425F Add a piece of parchment paper to a large bake sheet. Spread your potatoes out onto the sheet. Bake them for 20-25 minutes. At 10 minutes, I shake the bake sheet to make sure no potatoes are sticking. Then I do this every 5 minutes until they're cooked through. When your potatoes are done, lower the oven temp to 350F!! While your potatoes are baking, heat up a medium large skillet that is oven safe on medium high heat. When the skillet is hot, add in your sausage. Cook until browned, then remove onto paper towels to absorb any grease. Turn the heat down to medium low. And in the same skillet, add 2 heaping tablespoons of butter, and a tablespoon of bacon grease if you have it. Add in your diced onions and sautee until translucent. I usually add a little salt and pepper here. While your onions are sauteeing, whisk up your eggs. You can use 9-12. Once your onions are soft, you will add your potatoes into the skillet, then your sausage, then pour over your eggs. Put your skillet back on a medium high heat just for 1-3 minutes. All you want to see is that the eggs are beginning to cook around the edge of the skillet. Then put your skillet of yummy into the oven (again at 350F). Bake for 15 minutes, open the door and add your cheddar cheese to the top. Bake another 15 minutes. A toothpick should slide into the middle of the frittata and come out clean, except for maybe some melted cheese. *Make sure you test for doneness in the center of the frittata. That's where it usually takes the eggs the longest to get done. And is why I don't add my cheese until 15 minutes after I put it in the oven. (Remember, everything else is cooked.
