Follow me on Pinterest! https://pin.it/4VwE9Ed Follow me on Instagram! https://www.instagram.com/alicia_lynn... 2 cups Uncooked old fashioned rolled oats 1 1⁄2 tsp Baking powder 2 tsp Ground cinnamon 1⁄2 tsp Table salt 2 cups Unsweetened vanilla almond milk 2 large Eggs 1⁄2 cup Unsweetened applesauce 1⁄3 cup Lakanto Monkfruit sweetener with erythritol, golden 2 cups fresh sliced strawberries, you can also use frozen 1 ripe medium, Sliced Banana 2 tsp Vanilla extract 1⁄3 cup Chopped pecans Cooking spray Instructions: In a medium bowl, mix together the oats, cinnamon, baking powder and salt. In a large bowl, add in the remaining ingredients, minus the strawberries, banana and pecans, mix until well combined. Pour dry ingredients into wet mixture and mix in. Slice banana and fold into mixture along with strawberries. Spray a 9X9 baking dish with cooking spray and pour in oatmeal. Top with pecans and bake, uncovered, at 375 F for 40-50 minutes or until oatmeal is slightly browned on top and set in the middle. Store leftovers in an airtight container in the fridge for 5-7 days. Microwave to reheat. Makes 6 servings. WW Points per serving - 2 PTs.
