Mattar Pattice is a crispy and tasty recipe.It is usually prepared in winter season at the arrival of fresh mattar. It could be done at any season as the mattar are deep frozen and available in all seasons.The filling of pattice is similar to mattar kachori with aroma of powder masalas #mattar #pattice #mattar pattice #matar kachori Ingradients 1.two cups of maida + 4 tsp rawa + 4 tsp ghee boiled 2. one cup of fresh mattar 3.one inch ginger pc + bunch of coriander leaves + 4 to 5 green chillies coarsely ground 4. 1tsp coriander powder + 1/2 tsp jeera powder + 1tsp fennel seed powder + 1 tsp red chilly powder + 1/2 tsp turmeric powder + 1/2 tsp asafoetida powder + 1/2 aamchur powder salt and sugar as.per taste method knead the atta mixing all the ingradients mentioned above make it into soft atta and allow it to rest covering with wet cloth. Heat the pan and add 1 tsp ghee. Add the green mattar and stir till the moisture is reduced.coarsely grind the matar and again add to grated pan with little extra ghree add all masalas green masala and salt sugar. mix it well and make it reasonably dry.cool.the mixture in another container. massage the atta well. add to mixie and stir gently to make it soft.make small pedas and make thin rotis. Take 2 table spoon of melted ghee and add 3 table spoon of corn flour to it and stir well. take one roti on. platter spread ghee corn 6 mixture well on it.Sprinkle the dry corn flour and put another roti on it . do the same procedure to all the rotis.start making a roll of the bunch of rotis gently.see to it no air is trapped. Give a gentle tsp to the roll and remove the air trapped.cut into equal pieces with sharp knife.Take one peice and roll it tjin into roti again.Cut the edges to make it square. Add the mattar mixture and moist the edges and roll into pattice.Tap the edges.put the Pan to heat add oil and heat it once the oil is heated put the gas on medium slow. wail till the boiling temparature of the oil comes down. Add 2 to 3 rolled pattice to the oil. Fry till it becomes light brown. Fry all the pattice rolls. serve with green coriander and pudina chutney and tikhi mithi chutney of tamarind and dates
