Here is the full recipe: https://www.scuffedkitchen.com/recipe... v v v v v v v v v v Recipe: Indonesian Chicken Soup (Soto Ayam) Ingredients: 300g chicken tenders 30g chicken stock powder 20g lemongrass 2 or 3 kaffir lime leaves Salt to taste 1 or 2 shallots 3 garlic cloves 1 knob of ginger 40g macadamia nuts (substitute for candlenuts) 40g turmeric powder 40g coriander powder 10g white peppercorns 100g rice noodles 1 hardboiled egg A bunch of celery greens (for garnish) Sambal oelek (to taste) 50g bean sprouts 1 lime Instructions: Start by sharpening your knife. Peel the shallots, cut them in half, and slice them into thin strips. Set aside. Quarter the lime. Roughly chop the celery greens. Peel the garlic cloves and remove the woody ends. Peel the ginger using a small spoon. Create the spice paste by using a mortar and pestle. Add the ginger and garlic, then pound them together. Once they become pasty, add the nuts and half of the shallots. Turn everything into a paste. Add the white pepper, coriander, and turmeric to the paste. Mix well and set aside. Optionally, sprinkle the remaining shallots with cornstarch to make them crispy. In a large pot, heat one liter of water until boiling. Add the chicken stock powder, lemongrass, and lime leaves. Stir well, then add the chicken. Boil for a few minutes, then reduce the heat to a simmer. Cook for 20 minutes without a lid. While the broth simmers, heat a dollop of vegetable oil in a separate pan over high heat. Add the shallots and keep stirring until they turn dark brown. Remove and set aside. Reduce the heat to medium-high, then add the spice paste to the pan. Fry until fragrant, then set aside. Peel and quarter the boiled egg. Once the broth is done, remove the chicken from the pot. Shred it using two forks and keep it warm. Add the spice paste to the broth, bring it to a boil, then turn off the heat. Adjust the seasoning with salt if needed. Cook the rice noodles by placing them in a bowl with hot water for 4-5 minutes. Strain them. To serve, create an assembly station. In a deep dish, add the rice noodles, then cover them with a few ladles of the broth. Add the shredded chicken, crispy shallots, celery greens, bean sprouts, and quartered boiled egg according to your preference. Add a scoop of sambal to bring the flavors together. Serve the Indonesian Chicken Soup hot and enjoy its fragrant flavors.
