Join me to learn how to make a 1927 Love Apple Cake! This cake comes from a baking powder recipe booklet that I bought at an antique store. Love Apple Cake- Adapted from the Royal Baking Powder Cookbook, 1927 1 recipe white cake 1 recipe tomato filling 1 recipe seven minute frosting Make cake batter as directed (recipe below). Bake in 3 greased 8-inch layer cake pans at 375F for about 25 minutes. Cool. Spread with tomato filling between layers. Frost the top and sides with frosting and decorate with candy hearts. Makes one three-layer cake. Make sure to let the cake and filling cool before you assemble it. I think my filling was a bit too warm, but it is still an amazing cake! White Cake Recipe: 1/2 cup softened butter 1 cup sugar 3 egg whites 1 teaspoon vanilla extract 2 cups cake flour 3 teaspoons baking powder 1/4 teaspoon salt 2/3 cup milk 1. Cream the butter; add sugar slowly and continue beating. Add unbeaten egg whites one at a time and beat well. 2. Add vanilla. 3. Sift together the dry ingredients. 4. Add in small amounts of the flour mixture, alternating with the milk. Best when smooth. 5. Divide the mixture between well-greased cake tins. 6. Bake at 375F for about 25 minutes. Turn out of tins onto a rack & cool. Tomato Filling: 1 cup unseasoned tomato juice Grated rind of 1 lemon 2/3 cup sugar 2.5 tablespoons cornstarch 1 tablespoon butter 2 tablespoons lemon juice 1. Heat tomato juice in a saucepan over medium heat. 2. Mix together sugar and cornstarch. Add this to the tomato juice and stir constantly to prevent lumps. Cook mixture until thick and clear. Stir in lemon juice and butter off the heat. Set aside to cool. Seven Minute Frosting * *Note: If the frosting doesn’t thicken or add up to enough frosting, you may want to add 2-3 cups or so of powdered sugar and milk or cream to create a spreadable frosting. 1 unbeaten egg white 7/8 cup granulated sugar 3 tablespoons cold water 1/2 teaspoon vanilla 1/4 teaspoon baking powder Red food coloring Heart sprinkles or candies 1. Put the first 3 ingredients in the top of a double boiler ( have water heating in the bottom part.) 2. Beat with a whisk or egg beater for seven minutes or until thick. Take off the heat, add vanilla and baking powder. Beat until the frosting cools down. Add red food coloring and mix. Use to frost the top and sides of the cake.
