We love family nights that we get to spend time together, but when we have activities planned, the last thing I want to do is spend all of my time in the kitchen, so today I’m showing you a potato soup and a chili recipe that is so simple but so yummy and comforting at the same time! When you cook ahead and put your meals in the crockpot, it allows you to have cleanup done before everyone arrives.  For our activities, we carved pumpkins and let them up with little candles. There always makes everybody smile. And we also dipped some simple caramel apples, which we enjoyed as our dessert! Potato Soup Recipe:  5-6 Russett potatoes 1 Can Cream of Mushroom Soup 1 Cup Milk or chicken broth 1 Cup Sour Cream 4 TBSP Butter 1 tsp Salt 1 tsp black Pepper 1 tsp Garlic Salt 2 tsp Crushed Red Pepper (optional) Cheddar Cheese grated Wash and peel potatoes and cut into bite sized cubes. Place into a medium pan and cover with water. Turn the heat on high and bring to a boil. Turn down the heat to a medium/high and simmer boil for 15 minutes, or until potatoes are fork tender. Drain the water into a bowl and reserve for later. In a separate bowl, mix the remaining ingredients and pour over the potatoes. Smash a few of the potatoes with a fork or spoon to thicken the broth if desired. If you want to add more broth then add some of the starchy potato water you drained earlier. Season more to taste if needed with salt and pepper. When soup is hot then ladle into bowls and top with cheese and bacon if desired.. We love to eat this with premium saltine crackers. Our Family LOVES this soup! It is so easy to make but so filling and comforting on a cold day. Chili Recipe: 1 1/2 pounds ground beef, deer or elk 1 can pinto beans, drained and rinsed 1 can rotel fire roasted tomatoes and chilies 1 -15 oz can tomato sauce 1/2 can water 1 packet French's Chili-O original seasoning Cook meat until browned and drain. Now add everything into pan or crock and slow simmer for 15-20 minutes stirring occasionally or cook in the crock on high for 2-3 hours or on low 4-6! That's it! Serve with sharp cheddar grated cheese and whatever else you love! #chili #soup #potatosoup #potatorecipe #family
