These pies, reminding chebureki, are wonderful and so easy to make! Recipe: 8 tortillas 350–400 g of minced pork ham (or other minced meat you prefer, but pork is the best) 1/2 glass of natural yoghurt or kefir 1 small onion 70–100 g of cheese (Gouda or similar) Ground pepper (about 1/3 of teaspoon) Salt (about 1/2 of teaspoon, I guess, I measure salt by the number of revolutions of the mill :D) Oil 1. Chop the onion as finely as you can. Grate the cheese or just cut it into small cubes. Mix ground meat with onions, yoghurt / kefir, cheese, salt and pepper. 2. Take one tortilla, add a thin layer of meat on half of it, leaving a thumb wide edge uncovered. Then dip your fingers into hot water and moisten the edges around the entire tortilla. Fold the tortilla, press the edges together and glue them together using a fork carefully, tryng not to damage the tortilla, bet pressing with quite a lot of force. You need to go on the first side, then the second, and then again the first side and the second. Be sure you closed them well (even if you go three times on each side) because if the juice will leak into the heated oil, it will splash. 3. Heat quite a lot of oil to let meat pies float freely. Add meat pies and fry them on both sides until they get beautiful brown colour. Use lower heat as the tortillas will become brown quickly, but the meat might be still raw. It is better to fry a bit on one side, then another, and then again the first side and then the second. Turn them over very very carefully. 4. Take the pies out of oil and put them on a piece of kitchen paper to absorb the oil. Let them sit for 3 minutes, because they are very hot and this also lets meat to rest inside, and then dig in. Be careful, the meat becomes juicy and the juice might get everywhere. P.S. Cheese is optional, they are delicious and juicy without it. Also, you can add only cheese as we do for ouf picky eater, it deliciously melts inside. P.P. S. By the way, if there is some meat left, add an egg, breadcrumbs to keep the shape, a pinch of salt and fry yourself a couple of pork burgers, they will be delicious.
