Taktouka is one such classic recipe, that is ever so present on the Moroccan table. It is made and enjoyed all year-long, since it is the perfect appetizer for lunch or dinner. You won’t need any special tools to make this recipe at home. If you don't have a gas stovetop for grilling the peppers, you can always use your oven broiler to char the peppers, and create that delicious smoky flavor. Once your peppers are done, all that's left is for you to chop up the tomatoes, herbs, and garlic, then throw everything in a pan with seasonings, and wait for the Taktouka to simmer. Make it in advance and store it in the fridge, then preheat it whenever you fancy a delicious side-dish to spice up your meal. Serve it hot or lukewarm with a fresh salad and Khobz (Moroccan bread), then enjoy! Ingredients: 2 green peppers (poblano or bell peppers) 1 red bell pepper 3 large ripe tomatoes A small bouquet of parsley and cilantro 5 garlic cloves 1 tablespoon olive oil 1/2 tablespoon vegetable oil 1 teaspoon paprika 1 teaspoon salt 1 teaspoon ground cumin 1/2 teaspoon ground black pepper Steps: Step 1: Preparing the peppers 1- Place the peppers directly on the stovetop and grill while occasionally turning them until the skin is charred. Note: You can alternatively grill the peppers on an electric grill, charcoal grill, or using the oven broiler. 2- Place the grilled peppers in a bowl and cover with plastic wrap. 3- Set the peppers aside to rest for five minutes so that they sweat and become easier to peel. 4- Scrape off the charred skin of the peppers with a knife or by hand. 5- Cut the peppers in half, and remove their seeds. 6- Place the peeled peppers in a bowl of water and rinse them thoroughly, making sure to remove any leftover charred pieces. 7- Cut the peppers into small cubes, and place them in a bowl. Step 2: Preparing the Taktouka ingredients 1- Peel the tomatoes, then dice them into small cubes. 2- Place the tomatoes in the bowl with the pepper. 3- Finely chop the parsley and cilantro, and add it to the bowl. 4- Peel the garlic, and finely chop it, then add it to the bowl.
