Subscribe to Emeril Lagasse: / @officialemeril The Emeril Group: https://theemerilgroup.com Instagram: / emeril TikTok: / chefemerillagasse Facebook: / emeril Smash Burgers, Emeril Style For the Burgers: 1 ½ pounds ground chuck, 85/15 or 90/10 1 ½ teaspoons Kosher salt 1 teaspoon freshly ground black pepper Emeril’s Original Essence, to taste Celery salt, to taste 2 large onions, halved and sliced into half moons 2 to 3 tablespoons butter Emeril’s Worcestershire Sauce, for serving - • Emeril Lagasse's Homemade Worcestershire S... Your favorite cheese, thinly sliced Soft brioche buns or potato buns, for serving Place the ground meat in a medium mixing bowl and season with salt, pepper, and Essence to taste. Gently mix to incorporate the seasonings; do not overmix or burgers will be tough. Form into 6 patties, about ¼ pound each. Sprinle lightly with Celery Salt. Heat a large cast-iron skillet over medium-high heat. Add the burgers to the skillet (in batches if necessary) and cook until lightly charred on both sides. Use a cast iron press to smash burgers slightly, then add the sliced onions and butter around the burgers and cook, moving the onions around occasionally, until the onions are slightly wilted. Drizzle with some of the Homemade Worcestershire Sauce and stir to distribute the sauce. Place some of the onions on top of the burgers, top with cheese, and cook until the cheese melts. Place the buns on top to warm slightly if desired, then serve the burgers on the buns, drizzled with more Homemade Worcestershire Sauce to taste. 6 servings .
