This is a simple but fun variation on the Greek Classic dish Moussaka. It's served on a tortilla with a roasted tomato salsa, it's light and a bit of fun. If you have any left over meat sauce, you can reheat it and serve on pasta! Ingredients; Meat Sauce Olive oil 1 large onion chopped 2-3 cloves garlic chopped 500g Lamb mince 700g tomato passata 1 tblspn dried oregano (Greek) 1 cinnamon stick S&P Condiments; 1 Eggplant diced into cubes, fried in some olive oil till soft 250g Ricotta cheese and 100g feta (mixed well together) 12 small tortillas heated as per the instructions Roasted Tomato salsa - • Simple and tasty Roasted Tomato Salsa Method; In a medium saucepan over a medium heat add the olive oil Add the onion and garlic and cook till soft (3-5 mins) Add Lamb mince and cook till just brown Add the tomato passata, plus about 1/2 a cup of water Add the oregano, cinnamon stick and S&P Reduce the heat, cover and cook for approx 1 hr Keep an eye as you want the sauce nice and thick, but watch it doesn't stick or burn. Assemble; Spread the cheese mix on the tortilla Top with salsa, eggplant and lamb sauce Optional You can also top that with lettuce or baby spinach leaves ENJOY!! Facebook; / 238702364138077
