Bacon Wrapped Chicken in Bourbon Plum Sauce Master the ultimate Bacon Wrapped Chicken with a sweet and savory Bourbon Plum Sauce! This easy appetizer features juicy chicken thighs glazed in sweet plums and crispy bacon. Perfect for game day or parties—sweet, smoky, and dangerously delicious! 8 Ingredients: • 1 cup (220g) brown sugar • 1 tsp (3g) garlic powder • 1 tsp (2.8) onion powder • 1 tbs (3g) favorite rub or seasoning • 2 lb (907g) chicken thighs or breast cut into 1 x 1 inch squares • Favorite rub or seasing for coating chicken • 2 lb (907g) thinnest bacon you can find. Sauce: • 12 ounces (340g) plum jam • 2-4 Tbs (30-60g) favorite bourbon – adjust to taste • 2 Tbs (32g) soy sauce • 2 Tbs (30g) vinegar • 2 Tbs (30g) brown sugar • 1 Tbs (5g) dried minced onion • 1 clove garlic, minced • 1 tsp (2g) ginger – grated • 1 tsp (2g) crushed red pepper flakes (optional) Directions: 1. Preheat oven to 375°F/190°C 2. In a bowl mix together the brown sugar, garlic powder, onion powder, and rub. Set aside 3. Prepare cookie sheets lined with foil and a rack. Set aside 4. In a medium bowl coat chicken in your favorite rub or seasoning. Coat well on all sides. 5. Cut bacon into thirds. Wrap each piece of chicken with a piece of bacon and secure with a toothpick. 6. Coat each skewer with the brown sugar mixture and place on racks. 7. Cook for 20 to 25 minutes making sure chicken reaches 160°/71°C internal temperature. 8. Make sauce below while chicken cooks. 9. Toss chicken in plum sauce and Enjoy! The Sauce: Directions: 1. In a sauce pan on medium high heat combine all ingredients. 2. Bring to a boil stirring frequently to prevent burning. 3. After reaching a boil, reduce to simmer and cook until desired consistency. 4. Cool slightly before serving or cool completely before storing in the refrigerator.
