Bring to a full rolling boil, whisking constantly. Boil for 60–90 seconds to fully activate the agar. Remove from heat and add tahini and vanilla (and lemon juice if using). Blend briefly with an immersion blender until fully emulsified. Pour into lightly oiled silicone molds. Chill for 1–2 hours until fully set. Texture target: firm, sliceable, no weeping. Banana Caramel (Soft Layer / Sauce) Ingredients 3 very ripe bananas (about 300 g peeled) 80 g brown sugar or coconut sugar 40 g vegan butter or refined coconut oil 60 ml coconut cream Pinch of salt Optional: ½ tsp cinnamon Method Mash bananas until mostly smooth. Cook sugar and vegan butter until bubbling and lightly caramelized. Add bananas and cook on medium heat for 5–7 minutes until thick and glossy. Stir in coconut cream, salt, and cinnamon if using. Blend for a smooth caramel or leave slightly rustic. Cool to room temperature before assembly. Note: This caramel is intentionally soft and contrasts the firm panna cotta. Sesame–Oat Crumble Ingredients 60 g rolled oats 30 g white sesame seeds 20 g black sesame seeds 30 g coconut sugar or brown sugar 25 g coconut oil, melted Pinch of salt Method Mix all ingredients until sandy and evenly coated. Bake at 170°C / 340°F for 12–15 minutes, stirring once. Cool completely — it crisps as it sets. Assembly Unmold the tahini panna cotta. Spoon banana caramel on top or alongside. Finish generously with sesame–oat crumble. Optional garnish: toasted sesame seeds or tahini drizzle.
