Ingredients – Paneer Ghotala Paneer – 200–250 g (crushed or grated) Green peas (matar) – ½ cup (raw, not boiled) Onion – 1 large Green chilli – 1–2 Garlic – 5–6 cloves Ginger – 1 inch piece Tomato – 2 medium (chopped) Oil – 2 tbsp Butter – 2 tbsp Cumin seeds – 1 tsp Kasuri methi – 1 tsp (crushed) Turmeric powder – ½ tsp Red chilli powder – 1 tsp (adjust to Cumin powder – 1 tsp Coriander powder – 1½ tsp Salt – as per taste Hot water – as required Cheese cube – 1 (grated) Fresh coriander leaves – for garnish Method – Paneer Ghotala In a chopper, add onion, green chilli, garlic and ginger. Chop them finely and keep aside. Do not make a smooth paste. Heat a kadhai on medium flame. Add oil, then add butter. Let the butter melt completely. Add cumin seeds and let them crackle. Add crushed kasuri methi for extra aroma. Add the chopped onion–ginger–garlic mixture. Sauté on medium flame until the raw smell disappears and the mixture turns slightly golden. Add chopped tomatoes and cook until they become soft and oil starts separating. Lower the flame and add turmeric powder, red chilli powder, cumin powder, coriander powder and salt. Mix well and cook the masala properly. Add raw green peas (do not boil). Sauté for a few minutes so the peas absorb the masala and lose their raw taste. Now add crushed or grated paneer and mix gently to get a ghotala-style texture. Add hot water as required to adjust the consistency. Do not add cold water. Add grated cheese cube and mix gently on low flame until everything comes together. Finish with fresh chopped coriander leaves. Paneer Ghotala is ready to serve
