Creamy Pumpkin Pie Jello: 4 Servings Nutrition (Approx): 1 Serving Calories: 170 kcal | Protein: 11.8 g | Fat: 1.0 g | Carbohydrates: 22.8 g Creamy Pumpkin Pie Jello: 1 cup milk, 240g (soy, almond, or dairy) 1/4 cup maple syrup, 80g (adjust to taste or any brown sweetener) 7g gelatin powder (1 packet) 1 ½ cups plain Greek yogurt, 360g 3/4 cup pumpkin puree, 180g 1 tsp vanilla extract, 4g Pinch of salt 1 tsp pumpkin pie spice, heaping (or cinnamon) Optional: 1 scoop Vanilla Protein Powder (or pumpkin spice flavor) Pumpkin Pie Spice Mix: Makes 16 Teaspoons Ingredients: 3 tbsp ground cinnamon 1 tsp ground nutmeg 2 tsp ground ginger 1 tsp ground allspice 1 tsp ground clove In a small mixing bowl, add the ground cinnamon, nutmeg, ginger, allspice, and cloves. Stir until all the spices are well combined. Transfer the spice mix into an airtight jar or container. Store in a cool, dry place like your pantry, and it will keep fresh for up to one year! Instructions: 1. Add your Greek yogurt to a large measuring cup (4 cup) or the actual container you will store it in and set aside. 2. In a medium sized pot add your milk, gelatin, sweetener, pumpkin pie spice, salt and vanilla. Get this to a slight simmer stirring frequently. (Note: if you are using protein powder whisk through cold milk until dissolved before turning on the heat) 3. Next add your pumpkin puree and stir until it is at a simmer. Remove from heat. 4. Let mixture cool for 2-3 min before pouring it into your Greek yogurt. 5. Mix until it has fully incorporated, and add it to a container with a lid or divide the mixture into four serving glasses. 6. Refrigerate 3-4 hours until completely set 7. Refrigerate covered for 4-5 days. 8.
