Hi, my littlest onion bulbs! Thank y'all so much for joining us on a special episode of Dead Dad's Kitchen. This week we did something a little different with my buddy, Devin. His mom is dead (find out more on his podcast "Yes, and... My Mom's Dead) so we got to take a stroll down his memory lane to remember sweet angel; Joan. This dish is a comfort food for Devin and I felt all of the comfort eating it - I hope that y'all do, too. __________________________________ | Joan's Breakfast Fried Rice | 2 cups of rinsed and drained white rice 1/2 of one medium onion 4 cloves of garlic (not enough, but who am I to mess with the dead) 4 eggs Sriracha Salt, pepper, butter (duh) Cook your rice to rice cooker or bag instructions (this is a great use for leftover take out rice, too, if you've got any!!) Saute your garlic and onions until translucent BUT NOT MUSHY. Remove from pan and set aside. Heat about 1/3 stick of butter in a medium pan and dump your rice in. Begin the browning process. While butter is browning scramble your eggs to a medium scramble as they will cook more in the pan with the rice. Add your garlic and onions to the rice, along with parsley and scrambled eggs. Incorporate and plate up! Add sriracha or whatever hot sauce you like and enjoy!! _____________________ Forever and ever thank you to Devin (@devinentmacher) for being the first person to share their dead parent's recipe. It's not always easy but it's always worth it. Devin was one of the first people that I really got to talk to about having a parent who you miss every single day of your life. He is an amazing, talented and kind-hearted person who I am VERY lucky to call my friend.
