I regularly grow gourds in my home garden. While my husband and I enjoy it in many different ways. I have to get creative and sneak it in a few items for my kids to eat. If you have extra lauki you can definitely freeze it for use. Just grate it and steam it for 10 minutes in a pan. At this point you can either strain the liquid out or not. Then cool it down, divide it in portions, transfer it to freezer safe bags and freeze it. When you are ready to use it just use it as you would use a fresh one. I make a variety of yogurt salads and one of our favorites is with fresh lauki. At my home we either enjoy it alongside a rice meal or with bread. Lauki Raita with Lachha Paratha Lauki (green gourd) 2-3 cups freshly grated Half onion- thinly sliced 2 garlic cloves- grated ½ tsp cumin seeds- whole ¼ tsp nigella seeds- whole ¼ tsp mustard seeds- whole Two pinches of red chili flakes Salt and black pepper 2 tbsp olive oil 2 ½ to 3 cups whole milk yogurt- regular Instructions: Peel and grate lauki. Transfer it into a pot and steam it over a slow flame for 10-15 minutes. If the gourd is not very fresh then add ¼ cup water to it for better steaming otherwise just use low heat. Sauté onion in some olive oil until softened or more caramelized (as you like). Grate garlic in there. Add all the spices to it. Fry it gently for a minute. Then, transfer the steam lauki shreds to it and sauté it for a couple minutes till the aromatics are absorbed by the lauki. Prepare the yogurt by seasoning it with fresh grated garlic, salt, black pepper. Transfer the lauki mixture to yogurt and adjust seasoning. Serve it with a rice meal or any kind of bread your choice.
