Carb Manager https://apps.apple.com/us/app/carb-ma... ****************************************************** Keto Tex-Mex Rice Recipe Makes 1 Serving 6.9gNC Ingredients: 4oz Ground Beef 20g Sweet Peppers (diced) 20g Green Bell Peppers (diced) 1 Tbs Bacon Grease Salt To Taste 173g Fresh Cauliflower or Frozen “Riced” Cauliflower 1/2 tsp Ground Cumin 1/2 tsp Chili Powder 1 Tbs Apple Cider Vinegar 1/4c Water or Broth Instructions: Finely chop 173g of Fresh Cauliflower or process briefly in a food processor. If using frozen riced cauliflower, thaw, then press between paper towels to press out any moisture. Set Aside. Brown ground beef in a skillet then remove and set aside. Heat 1 Tbs of bacon grease then sauté peppers to desired doneness. Add ground cumin, and chili powder. Add back in Riced Cauliflower and ground beef and salt to taste then heat briefly until warm. Set it aside. Deglaze the pan with 1/4 cup of Water or Broth and 1Tbs of Apple Cider Vinegar. This will reduce down quickly. Remove from the heat. Add back in the ingredients and stir well to coat everything with the sauce.
