Instagram / @therecipetherapist Facebook https://www.facebook.com Apple Berry Pie Filling Ingredients: 3 large Honey Crisp apples or 4 medium sized apples (my second choice apple is Pink Lady cut into 1/4 inch thick wedges) 1 cup of fresh blueberries 1 cup of fresh strawberries cord and cut into halves 1 tbsp. of fresh lemon 1/2 tsp. of salt 3/4 cup of sugar +1 tsp. for blueberries 3 tbsp. of quick cooking Tapioca 1/2 tsp. of cinnamon 2 tbsp of salted butter (Cut into eight squares) 1 tsp. of vanilla extract 1/4 tsp. of almond extract (For the top Delicious of the piecrust you need 1 tbsp. of water to brush & 1 tsp auger to sprinkle ) Piecrust Ingredients: 2 1/2 cups of flour (all purpose) 2 tbsp. of sugar 1 tsp. of salt 12 tbsp. salted butter (chilled in the freezer) 8 tbsp. of butter flavor Crisco shortening 4 tbsp. of Tito‘s vodka (chilled in the freezer) 4 tbsp. of ice water Instructions For Piecrust: 1. Cut up the 12 tbsp. of butter into 1/2 inch. pieces and stick into your freezer. Also add in there the 4 tbsp. of vodka and 8 tbsp. of shortening then add 1/2 cup of cold water. Leave everything in there about a half an hour. *When you remove the water from the fridge, add ice to it. 2. In the food processor, add 1 1/2 cups of flour, sugar and salt, pulse until well combined. 3. Add the chilled butter and shortening. 4. Pulse until it is combined and there are no streaks of flour left. 5. Add the remaining 1 Cup of flour. 6. Pulse until it is combined, broken up, and evenly distributed around the bowl. 7. Pour mixture into a large bowl and add the chilled vodka and ice water. 8. Mix with a hard spatula at first and then use your hands to form it into a bowl. You may have to add a tbsp. of flour if dough is sticky. 9. Cut the dough in half and shape into two discs. Wrap with plastic and refrigerate for one hour. 10. Using a lot of flour, roll out the dough larger than the width of your 9 1/2 inch pie plate. 11. Once the dough is rolled out, use the rolling pin to roll it up and transfer it into the pie plate, press it into the pie plate, folding the edge under. (No waist) 12. Set the top piece aside for later to make a lattice top! Instructions For The Inside of The Pie: 1. Preheat oven to 375° in a large bowl peel and slice apples 1/4 inch thick. Add lemon juice, tapioca, cinnamon, vanilla and mix! 2. In a separate bowl and the cut strawberries and blueberries. Add the almond extract and 1 tsp, of sugar. Mix to combined (don’t crush) set aside. 3. Then take your piecrust and fill it with 1/2 of the apple mixture and 1/2 of the berries mixture on top (do not mix we are layering this pie)! Repeat this step one more time. 4. Place the 2 tbsp of butter pieces evenly on the whole top of the pie. Set aside. 5. Take the other remaining rolled out piecrust and with a pastry wheel or cutter cut about 10 strips into 1/2 inch wide pieces. 6. Take five strips from the longest to the shortest and place across the top of the pie folding the ends to fit the pie edge, and repeat the process in the opposite direction. 7. For the crimped or pinch look, take your thumb from one hand as a base, and the forefinger and thumb from the other hand and cramp the crust. 8. Brush the top with water and sprinkle with sugar (not to drench) 9. Place on a cookie sheet and bake at 375° for 1 hour or 1 hour and 15 minutes until bubbly and thickening. You may have to cover the pie with foil halfway into the baking process to ensure that the crust does not burn on top . Tip, the homemade piecrust can freeze for up to three months. *Honey Crisp or Pink Lady apples work the best for this pie and the Tapioca is the best thickening agent. *No substitutions!
