Here is the recipe if you want to give it a try: 200g water 250g type "00" white flour or pizza flour 50g sourdough starter 5g salt Process: Mix all the flour with 180g water and autolyse for 1h Add leaven to the dough, mix, then rest for 1h Add salt and the remaining 20g of water, mix, then rest for 1h From now on do 4 coil folds every 1h-1h and 30 min, then place it in the fridge Next day take the dough out of the container, and cut it in 2 equal size pieces, and let them proof at room temperature for 1h-2h in a couche Bake with steam at 250°C for 12 minutes, then at 220-230°C without steam for 14 minutes.
